So called genetically engineered wheat has not been licensed and is not grown for human or animal consumption and there is no reason or evidence to suggest it would in any way be harmful or different in terms of human digestion or nutrition.

Plelase. You seem to be addressing and confusing a large number of scientific issues with nothing but popular culture impressions and one man's claims. Celiac disease affects from half a percent to one percent of the population. There is no reason to think the results of wheat breeding since 1960 (essentially the "Green Revolution") should be harmful in any way.
